Brace yourselves… its #Hallothanksmas season…

I don’t know about love at first sight when it comes to people, but I definitely think it correlates to food. Just look at these beauties!! Tri-color carrots are the epitome of fall. With each color having a slightly different flavor profile, it really adds to the already scrumptious carrot souffle southern classic. Layer these bad boys before baking and you have the perfect dish for adult holiday soirees. #imfancy  
​Ingredients:

  • 12 large tricolor carrots  (4 of each color)
  • 1 1/2 sugar (1/2 cup per carrot batch)
  • 3/ 4 tsp baking soda (1/4 per carrot batch)
  • 3/4 tsp softened butter (1/4 per carrot batch)
  • ​3 large eggs (1 egg per carrot batch)
  • 3 tsp cinnamon (1 tsp per carrot batch)
  • 3 tsp nutmeg (1 tsp per carrot batch)
  • 3 tsp all spice (1 tsp per carrot batch)
  • 3 tbsp flour (1 tbsp per carrot batch)
  • powdered sugar (for dusting)
Directions:

  1. Chop the carrots into 1/2 inch pieces and boil until soft. 
  2. Drain and separate by color. You’ll layer the completed mix to create the rainbow look in the end.
  3. Blend or mix the carrots until smooth. Then mix in the cinnamon, nutmeg, all spice, egg, sugar, butter, flour, and baking soda. Mix again until smooth. Do the same for the remaining two carrot mixes. 
  4. Oil and flour your baking pan to prevent the soufflé from sticking.
  5. Layer each mix of the carrot soufflé carefully into pan and bake on 350F for approximately 30-35 minutes. It will be done when the center is “springy” to the touch and no longer jiggles like jello. 
  6. Cool, dust with powdered sugar, and serve. Easy peasy.
